Good intentions

I buy vegetables.

Really I do.

I even like vegetables, as do my children and husband. Veggies grace dinner every night.

But that's about where it ends.

Yep, I'm coming out of the vegetable closet. While I buy them and make plans with them, they languish in the crisper drawer...

I'm convinced that my weight wouldn't be my weight much longer if I could only just consume more vegetables.

Take this week for instance. Grand plans were laid for caramelized radiccio (just how do you spell that?) and onions. Over polenta. For lunches. Sounds yummo huh?

How about roast cauliflower and sweet potatoes? Mmmmmmm. The leftovers make dreamy soup.

But have I done anything with them?

No.

Why oh why am I eating peanut butter and jelly when such culinary delights await me?

I'm blaming said "weight". It's self-perpetuating, right?

But seriously, I need to eat more vegetables.

Veggies actually get eaten in my house. Fruits, no. I understand the mooshiness of dead plant matter in the fridge. How can I convince my daughter that fruit is good if her dad and I don't eat any ourselves?

I do that with baby greens. I LOVE salads and I eat the normal cheap lettuce when I get it. I don't know why I dis the lovely baby greens.

We are veggie freaks at my house. Grill 'em, roast 'em, etc. I've been using up the surplus of veggies in casseroles lately....so good. Last weekend though? Macaroni and cheese. Pizza. BLT's. SO BAD. You're just in a veggie slump, that's all!

What I'd really like is for the fresh stuff to come in smaller bags, heads, sizes. I'd like to pretend that I could cope if I had smaller amounts of it all. It is not to be, will never be, and yes last night, I too cleaned out my fridge.

On the upside, I can now fill it, right?

i'm just in awe that you know how to cook those! the description is lovely. our mexican version of cooking vegetables won't help me lose weight! raddichio... never tried it

veggie update...2 days later and they still languish.

having severe veggie-neglect guilt.

belle, will send my kids your way...can't keep fruit in the house. I swear they eat it in their sleep.

lynn...baby greens...mmmmmm, will adopt all you have.

scarlet me dear...your words are precog. definitely in a hormonally driven non-veg, all sugar and salt slup, if you know what I mean.

mini...truth told, i punt a lot in the kitchen. comes from having italian blood i think.

Oh my gosh, you are so my culinary twin. Broccoli, turnip greens, kale: they just look so good and healthy in the store, and I feel so boldly healthy when I buy them...and cooking them is like pulling teeth. Rock on, Dawn - we MUST eat more veggies.
